This bread uses a small amount of yeast, and lets time do the work. This means you don't need to kneed it as often, and generates a tastier flavor profile.

  1. Make Dough

    • 1 1/2 cup Water
    • 1/4 cup Sourdough starter
    • 3 cups Flour
    • 1 teaspoon of salt
    • 2 tablespoons of chia seeds

    Start with the drop test, take a spoonful of the sourdough, if it floats in the water, then it's good to go. Then mix flour and salt into the water and yeast mixture. Before dough is completely mixed, add chia seeds and mix in. Let sit until it rises (depending on ambient temperature, can be 6-8 hours) I like to do it overnight.

  2. Prepare loaf

    Start oven and Warm to 500 °F. Then flip dough over, and form into a loaf shape. Let it rise again while the oven warms.

  3. Bake

    Place in over for 45 minutes in a dutch oven, or bread baker/cloche. Allow the bread to cool on a rack when finished.
