Pollo asado tacos feature juicy, garlic-citrus marinated grilled chicken breast in warm corn tortillas. Quick to make and full of flavor, these tacos are a tasty weeknight dinner.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Juice of 2 limes
  • Juice of 1 orange
  • Corn tortillas
  • Sliced onions and cilantro for serving

Instructions

  1. Marinate the chicken

    • chicken breasts
    • olive oil
    • garlic
    • cumin
    • chili powder
    • lime juice
    • orange juice

    In a gallon size ziploc bag, combine olive oil, garlic, spices, and citrus juices. Add chicken and marinate for 30 mins up to overnight.

  2. Grill the chicken

    • chicken breasts

    Heat grill or grill pan to medium-high heat. Grill chicken 6-8 minutes per side until cooked through and char marks appear. Rest 5 minutes before slicing.

  3. Assemble tacos

    • chicken
    • corn tortillas
    • onions and cilantro (for serving)

    Slice grilled chicken into strips. Warm tortillas on grill. Fill tortillas with chicken, onions, cilantro, and any other desired taco toppings.
