
Poached eggs, portobello mushrooms, smoked salmon, and an avocado crema sauce. Nutritious and delicious!
Preheat
Preheat oven to 400 °F. Line a baking pan with foil and add a little canola oil.
Prep mushrooms
Wipe mushrooms with paper towel and remove stems. Bake 15 minutes.
To make Avocado crema
In a blender or food processor, add avocado, olive oil, lemon juice, hot water and salt and pepper to taste.
Fry Eggs
Heat a small skillet and add a little canola oil. Fry your eggs until it reaches your desired doneness.
Assemble
Remove mushrooms from oven and assemble on a plate one mushroom, smoked salmon and fried egg on top. Drizzle the avocado crema before serving.
