Ground pork, minced pork or pork mince is pork that has been finely chopped with a knife or a meat grinder/mincing machine.
Pork butts naturally carry about 30% fat and so generally used for ground pork. The meat grinder will force chunks of meat against a steel plate with holes in it where a blade cuts the meat as it is pressed through. It starts with a plate with large holes, and then is passed through a plate with smaller holes the second time.
